Today is a pretty special day for me — three years ago, I went vegan. It’s my “veganniversary,” if you will. Three years deserves a special, celebratory treat, don’t you think?
Me, too. While my special treat was baking over the weekend, our dishwasher went into full meltdown mode – literally — as it consumed my herb keeper. With a house full of toxic fumes, we had no choice but to temporarily evacuate. Needless to say, my treat didn’t survive fully intact.
But what’s even better than a homemade celebratory treat? Not having to make your own celebratory treat. ;) I swung by Café Gratitude today and picked up a slice of “I am Cherished,” a maple and fig cheesecake with an almond-date crust.
Their desserts never fail. It tumbled and slightly melted in my car. But that didn’t make it any less incredible.

So now I’m going to take it easy, enjoy my cake as I reflect back on three wonderful years, and raise my glass to many, many more. Will you join me?
